Bourbon-Glazed Sausage Bites
PREP: 10 minutes COOK: 4 hours (low)
1 pound cooked light smoked Polish sausage or
smoked turkey sausage, cut into 1-inch slices
¹⁄₃ cup low-sugar apricot preserves
3 tablespoons pure maple syrup
1 tablespoon bourbon or water
1 teaspoon quick-cooking tapioca, crushed
In a 1½-quart slow cooker combine sausage slices, apricot
preserves, maple syrup, bourbon, and tapioca. Cover and
cook on low-heat setting for 4 hours. If no heat setting
is available, cook for 4 hours. Serve immediately or keep
warm, covered, in the slow cooker for up to 1 hour. Serve
with toothpicks. Makes 12 servings (about 2 sausage
pieces each).

Meatballs

(low) or 2 to 2½ hrs. (high)
1 12-ounce package refrigerated or
frozen cooked turkey meatballs,
thawed ( 12)
½ cup bottled roasted red and/or
yellow sweet peppers,
drained and cut into 1-inch pieces
1 teaspoon crushed red pepper
1 cup bottled reduced-sodium
pasta sauce
Snipped fresh basil (optional)
In a 1½- or 2-quart slow cooker
combine meatballs and roasted
peppers. Sprinkle with crushed red
pepper. Pour pasta sauce over all in
cooker. Cover and cook on low-heat
setting for 4 to 5 hours or on high-
heat setting for 2 to 2½ hours. If no
heat setting is available, cook for 4
to 5 hours. Skim fat from sauce. Stir
meatballs gently before serving. Serve
immediately or keep warm, covered,
on warm- or low-heat setting (if
available) for up to 2 hours. If desired,
garnish with basil. Makes 12 servings
(1 meatball and about 1 tablespoon
sauce each).
